Apologies and gratitudes. As many of you know we have been sold out of miso for most of winter 2023. This year is looking to similar if not more limited. We have just opened our barrels for the 2023/2024 season and our demand already appears to be greater than our supply. If you would like to stay stocked with miso through this year we suggest that you stock up while you can.

We will have limited stock for the 2023/2024 season. Sorry for any inconvenience this may cause you. We work hard to keep your bellies satiated and nourished but your bellies are growing and it has been a process to keep up. Thank you to for putting us in this situation. Your love and kind words are always a blessing and we are doing our best to meet your needs. This process is a labor of love and time, and in order to keep the quality you have come to know we must ask you to please be patient with us.

Normally our signature Miso is available at many of the; co-ops, natural and specialty food stores, and local farm stands around Maine, eastern Massachuesetts and Rhode Island. Unfortunately this year it will be hard to find us as we are in limited supply. Please contact us for more information on where to purchase miso near you or simply order online.

Check with your local retailer for limited batches of our miso. Otherwise, you may schedule a pickup or place an order from our online store. Sorry for the inconvenience and Thank You for your patronage.

Miso Making Workshop

Join Nicholas of go-en fermented foods for a sweet (quick ferment) miso making workshop and discussion about miso and its uses, as well as the history and cultural significance of this traditional fermented food of Japan. Having been produced for more than a millennium, miso utilizes techniques and relationships that have been passed down from generation to generation with little alteration. Learn why that is and get to know the microbial partners within and around us that have agreed to carry on these relationships.

In this hands-on workshop, the goal is to send participants home with the confidence to tackle miso on their own, along with a jar of sweet miso to ferment.

Maine Fungi Fest

In this workshop participants will learn the basics of using the Japanese fungus koji to explore the realms of flavor and fermentation. Koji is the cornerstone of Japanese food culture, and is responsible for foods such as miso, soy sauce, rice vinegar, and sake. It contains a powerhouse of enzymes which when applied to edible substrates can breakdown foods to their simplest forms releasing flavors and nutrients, making them more readily available for digestion by humans and microbes alike. We will dive into how this power fungus has been utilized in traditional fermentations processes, and how to apply these same techniques to nontraditional substrates such as mushrooms.
