go-en fermented foods is a small scale fermentory in Whitefield, Maine, U.S.A.

We place much love & respect to our foods and dedicate true gratitude to; the ancestors, all the elements, the creatures big and small, and of course first and foremost, our countless amazing hard workers. The microbes that live within, between, and around us!

Handcrafted in Maine

Go-en specializes in traditionally fermented Japanese seasonings and koji based ferments. Relying on natural fermentation periods dictated by the seasons and world around us, we work with the rhythms and flow of our environment aspiring to maintain a natural flow and balance. All of our ferments are living, non-pasteurized communities containing active cultures and naturally occurring beneficial microorganisms.

We transform foods with time and attention, nurturing them, attending to their needs, and by creating safe spaces for them to grow up and be the best them that they can be. They do such good work and always try their best. Thus, we feel it necessary to offer our creations the basic respect of keeping them alive so that they may continue to live out their lives and discover their full excitement, to someday meet and become one with you.

Happy Ingredients

We select fine organic, non-GMO ingredients, local as much as possible, and wild when available - Because the good ingredients are nurtured in happy environments and are fresh and full of energy, we honor them. Our ultimate goal is to highlight and enhance upon the edible gifts of Mother Nature and her myriad of microscopic helpers.

Koji-kin (aspergillus oryzae) or seed koji is essential to what we do. Koji is the lead actor and star of our creations. It is a true source of inspiration and is the power behind our ferments. In Japan Koji has been selectively bred over centuries to isolate and select cultures best suited to their particular roles. Out of respect for these traditions and as a means to ensure our quality and safety, we import our starters directly from a small handful of historic Koji-kin producers in Japan. A small handful of producers have carried on the ways of tradition and have always supported the craft food artisans of Japan. It is to them that we also offer our gratitude and respect. As a result of their hard work and dedication, what we do becomes a possibility.

Once in Maine Koji-kin gets to meet the ingredients of Turtle Island, once again being born anew into the cycle of life. Koji is more than just an ingredient but lives at the heart of go-en fermented foods, leading us to right direction with its pure light. Much love to Koji
